Well, normally, I'd be right with you on this, but Linux has needed a competitive image editor for a long time now, and GIMP 3.0 basically represents the first big step towards that. Usually that means I cannot find the stuff I need because it got moved, or, even worse, REmoved.

Why do today's graphic designers think that flat is the new look. I prefer the old Wilber look with it's shadowing.

I try to be open to both camps but I would agree the Logo Icon was probably due for an overhaul since the program has essentially been ported to GTK3 and looks quite different itself..
A cursory look at Distrowatch and any theme/icon search will definitely tell you that we are 98.64% in FLAT territory these days so it should certainly not come as a surprise that Wilber (sp?) was doomed to be flattened..
This kinda goes back to my older skeuomorphic UI design topic asking why MX was sticking so hard to a flat theme.
