Inconsistent icons are a known issue on Plasma 5.
In the time you took to respond, you could have just posted the required information.
Maybe you have an icon set that doesn't have the MX icons? (The MX Conky icon shows properly for me)

Most likely the file-roller extension gets its icon from the icon theme that is currently used for gtk applications.
The standard icon theme for gtk is Adwaita icon theme. I'm pretty sure the correct icon is in Adwaita since file-roller is a Gnome application. Try changing your gtk icon theme to Adwaita. Then log out and in again so the setting takes effect.
I haven't seen this problem when using Nemo in Cinnamon or Xfce.
Note to self and others: SysVinit is a good option. However if you run into problems try with systemd first. This applies to AppImages, Flatpaks, GitHub packages and even some Debian packages.

Afaik, you can not set a separate (gtk) icon set on Plasma. There is only one icon set to choose.
You can set icons manually but they are not respected in all appearances, like say you change the Firefox one, it will still use the old one in the upper left corner of the Ff window.
Ok maybe an idea is to create a desktop entry. Could also be from start menu...
Because I see none for file-roller.
Maybe thats the way to go :)

The Firefox icons you see in title bars are in the /opt/firefox/ folder I believe.
The easiest way to solve your problem with File Roller is probably to use another archiver. KDE comes with Ark(?) so should have an icon the the Breeze icon theme.
If you want to use File Roller with correct icon and Breeze icon theme you must add Adwaita to the index.theme file in your Breeze icon theme. This link shows the relevant "Inherits" line in the index.theme file: https://ubuntuforums.org/showthread.php?t=2154234
