Under MX 19.4 xfce I do Ctrl+Shift+V to insert Time and date but I can't find how to do so under MX21 KDE.

That's a Featherpad feature. KDE uses KWrite by default, you could install Featherpad, use a workaround, see here for some ways to do it: https://unix.stackexchange.com/question ... it-in-kate

Or open the file in LibreOffice and use LibreOffice shortcut to insert the date/time
