I installed KeePassXC from the MX Package Installer on MX 21.1 and it installed KeePassXC version 2.6.6

Is there an easy way I can uninstall this version and install version 2.7.1 of KeePassXC?

You would "uprade" KeePassXC from 2.6.6 to 2.7.1
using MXPI (MX Package Installer) within the "MX Test Repo" tab:

Positive feedback on the versions from testrepo may motivate MX Packagers team
to move the newer version into MX main (stable) repo, so it will
become available within the "MX Popular Apps" tab as well as the "Stable Repo" tab.
