So it seems when I change from UEFI to legacy booting it boots right up.

Did you create the Live USB in Mint with their tool? (mintstick)
Is Secure Boot off in your UEFI settings? (Most MX Live USBs that I've used boot with Secure Boot on, but it must be disabled for an installed version to boot.)

You might also try a different brand of USB stick...I have two laptops and several USB sticks, and one works to boot one laptop and not the other, and then another stick boots the second laptop and not the first, and then a third works on both.

I used to have a notebook with UEFI and as I recall there were two entries for my USB stick in its UEFI boot device settings, one that said UEFI in the device name and one that didn't. I had to move the UEFI one to the top of the list to make it boot in UEFI mode. That was with a Mint 18 ISO burned to the USB with Rufus (in Windows.)

I went ahead and installed MX and it worked find with UEFI boot so apparently it was just the live boot that had the problem.
