uninstall Thunar when switch to Nemo

Can one disable/ uninstall Thunar when installed another file manager? Or does the whole system fall apart?

you can remove thunar. file management on the desktop will probably break, but you can do it. you can still manage files on the Desktop from inside a file manager in the ~/Desktop folder.
also automounting of external devices (like usb sticks) probably won't work. they should still be able to be mounted manually.

You can run Nemo, dolphin or any of the commanders with Thunar still on board. And xfce will remember which FM you like. I have found dolphin to be very nice.

I run Nemo and Thunar on the same desktop. No need to remove Thunar if you're using Nemo.

The idea is to uninstall any programs that are not being used because of safety/ hardening protocol.

Yes, and 80-90% of the safety issues are from the web-browser and the user himself.
(I used Nemo (and the Nemo scripts) too in the past instead Thunar, but now I prefer Thunar and the Thunar actions)

In this instance you are not 'gaining any security advantage' by removing thunar.

Not always, even if you deselect Thunar in the
standard applications and replace it with, for example, Nemo.

I have had this happen, but it has remembered on several machines where Dolphin was preferred and used.
I also have a note that discusses using the following. (There is a "Double Check this" mention on the note, so not positive that it didnt do or not do something that it wasnt supposed too.)
