Are you going to wipe out mac os on the disk and go full linux? If so then you may use the entire disk as it's the easiest option. It's also easy to have separate partitions for root and home but not necessary.

If you can use entire disk please do so and let this installer do use and create all needed partitions,
do also post the log after installation, in case any error or warning was shown...

update :
It looks like my SSD was shiting the bed, when the installer was running it said some thing about the Trim had erros
so I brought a new SSD today, plug in my USB stick and tested the install, work perfect first go
saved the log,( i did what you said with the log if you need it) rebooted and check the fsdisk.
I thought I better check, rebooted without the USB and it work first go ....YA sooo happy .
I also notice straight away that when installing the new SSD , when I was holding alt ( comand ) that the EFI would come up instantly and load the USB, which never happen before use to take 10 min to load USB ( i thought it was faulty ram )

@Yellowhoney, I bet your happy now.
It is such a pain when we have an undiagnosed hardware problem, especially when we are in unfamiliar territory. Causes us to waste so much time doing stuff that we don't really need to be doing.
We don't know what we don't know...
